Apple and Cashew Butter Sandwich

1 whole wheat Lite English muffin, toasted

1 Tbsp cashew butter

1 Tbsp Low sugar apple preserves

4 thin apple slices

Spread both sides of the muffin with the cashew butter and apple preserves. Arrange the apple slices in the center and serve open-faced.

Note: To make cashew butter, place ½ cup of unsalted roasted cashews in a food processor fitted with a metal blade or a blender. Process, scraping down sides of the bowl as needed, until a paste forms. If a thinner butter is desired, add a few drops of canola oil and process to blend. Store leftover cashew butter in a tightly sealed container in the refrigerator. Makes ½ cup.
